چکیده

Textural attributes of cooked rice (100 samples) were predicted using pasting properties. Two textural attributes (hardness and stickiness) were evaluated by a texture analyzer and seven pasting-property parameters as well as profile data measured by a rapid visco-analyzer (RVA) were used to evaluate predictive models of the textural attributes using Partial Least Squares Regression. The textural attributes evaluated by a texture analyzer were relatively well predicted using data from RVA profiles (optimized Rcal>0.77). However, the RVA parameters did not seem to be good predictors of the textural attributes of cooked rice.

Prediction of Long-Grain Rice Texture and Pasting Properties From Starch and Protein Fractions

The objective of this study was to determine predictive models of rice functionality from protein and starch chemistry data. One long-grain rice variety (Cocodrie) was harvested from two fields in Arkansas. Rice was harvested from 8 locations in each field. Samples were then stored at 21oC/50% RH until equilibrated to a storage moisture content of 12%. Texture properties were measured using a T...

Pasting properties of calcium-fortified rice

Calcium–fortified rice is normal rice fortified with calcium and processed by consecutive steps, i.e. infusion or soaking of the rice grain in a calcium salt solution, draining and drying. Heating during infusion causes pregelatinization of rice starch resulting in a change in the pasting properties of Ca-fortified rice. Pasting properties determine the cooking quality of rice. The purpose of t...

Effect of Germination and Parboiling on Milling, Physicochemical, and Textural Properties of Medium- and Long-grain Rough Rice

Germinated brown rice is commonly consumed in Asia for its enhanced nutritional properties such as gamma-aminobutyric acid (GABA) and softer cooked texture. However germination decreases milling yield and alters some physicochemical properties, and most germinated rice studies evaluated medium-grain and aromatic rice cultivars. This study compared the effects of germination duration and parboil...

Comparison of physical and chemical properties of medium-grain rice cultivars grown in California and Arkansas.

The physical attributes, chemical composition, and physicochemical properties of 2 medium-grain rice cultivars from Arkansas (Bengal, Medark) and from California (M202, M204) were compared when grown in their respective locations and grown together in Arkansas to better understand the impacts of heredity and environment on medium-grain rice quality. Variations existed in grain dimensions, parti...

Ageing of Stored Rice: Changes in Chemical and Physical Attributes

Rice ageing is a complicated process, which involves changes in physical and chemical properties of the rice grain. Starch, protein and lipids are the main rice grain components which affect cooking and eating quality. While the overall starch, protein and lipid contents in the rice grain remain essentially unchanged during storage, structural changes do occur. These changes affect the pasting ...
